At some point in the time-space continuum, should you do something well enough, for long enough — someone, somewhere might refer to you as a ‘stalwart’.

When referring to Bridget Dunn and Jeff Kennedy, the word ‘stalwart’ doesn’t immediately conjure its intended meaning — that is, to be tenacious and hard working, over an extended period of time. Not because it’s not accurate, it technically is. Stalwarts of hospitality they absolutely are. Perhaps it’s the sense of a stalwart being ridgid and of the past that doesn’t sit quite right.

Perhaps there’s better words to describe Bridget and Jeff, and one day they might allow me to publish one that speaks to their integrity and boundless energy without encroaching on their down-to-earth humility.

Perhaps it will be the word that describes the feeling of walking into the bubbling Prefab rush while thinking “Where are my friends? Where the hell am I going to sit? When am I going to eat?” and seeing Bridget flash her famous smile that says “Your friends are coming, your table is 2 minutes away and the salmon salad has your name on it.”

I’ll scratch around further for the word that sums up the creations of Jeff’s restless mind. From developing the Acme coffee cup to roasting coffee beans to baking bread. His continuous drive to innovate and improve everyday experiences into something special. Carving off the unnecessary. Improving what remains — I guess, that word could be Acme: the point at which something is at its best or most highly developed.

So until I settle on those exact words, perhaps it’s easier to describe Prefab Cafe and it’s twin flame, Acme… these business manifestations from Bridget and Jeff’s personal qualities.

Simply put, Acme is the brand, and Prefab is the place.
